Just a really quick post today to share my favourite pancake recipe. Light and fluffy American style pancakes that are really quick and easy to make. They are called ‘the one cup pancake’ as it says in the name, everything is measured in cups. If you don’t have a measuring cup then a mug will do!
For the Pancakes
- 1 cup Self Raising flour
- 1 cup Milk
- 1 Egg
Put all the ingredients in a bowl and whisk together- you can season with salt if you like, I prefer to cook without salt.
Heat a frying pan to a medium heat and put a knob of butter in to grease the pan (I’ve recently become a convert to coconut oil so I opted to use this instead of butter).
Using a ladle or spoon, pour a small amount of batter and ‘swirl’ around the pan to cover the base.
After cooking pancakes many times and finding I always end up eating last, I now cook them and keep them in a heatproof dish in the oven at a low heat. That way we can all eat our pancakes (hot) together. (Note the little hand trying to get the first bite!)
